1. Baby Potatoes and Brussels Sprouts.

    Not sure why, but I had kinda been feeling the need to tackle a brussels sprouts dish. I honestly can’t even remember if I’d ever had them before…but just the name: BRUSSELS SPROUTS.

    Sounds disgusting, right?

    I kinda mushed together two different recipes I found. A mash-up if you will. 

    Take a gander and try it out. It’s tasty, swear.

    INGREDIENTS: 

    1lb of baby potatoes 

    1lb of brussels sprouts

    1 cup walnuts (i didn’t measure these out…just used the rest of the walnut bag i had already)

    2tsp chopped sage (one recipe said sage, one said thyme, i’m thinking of something else i might try next time)

    1tbs olive oil

    lemon juice, salt, pepper…basically whatever you feel like using to season. I usually end up using these three cause they’re staples in the kitchen.

    garlic- in any form. I love garlic. Powder, chopped cloves…in this case I used the minced garlic I keep in a jar in the fridge.

    DIRECTIONS:

    1. Preheat oven to 450 degrees.

    2. Roll potatoes around a bowl with the olive oil then throw the salt & pepper on top.

    3. Place potatoes on foil lined baking sheet side by side then add the walnuts to the other side. Put in oven for 5 minutes then remove walnuts. 

    4. While the potatoes and walnuts are in the oven, toss the brussels spouts in the bowl to soak up all the excess olive oil. This is also where I added about half a lemons worth of juice and also about 2tsps minced garlic. 

    5. After walnuts are removed, add the brussels sprouts to the baking sheet with the potatoes. Place back in the oven for 10mins.

    6. Remove from oven and dump back into the bowl with the walnuts. Toss them all together and feel free to add more salt & pepper to taste.

    7. Sprinkle sage on top to make it pretty and serve!

    NOTES:

    Next time I make this, I think I’ll chop the all the potatoes and brussels sprouts in half. The dish was so good but probably much easier to shove into your mouth if the pieces are smaller.
